Sweet Coconut Clove Chicken
12 each chicken drumsticks
½ cup light coconut milk
½ cup water
½ cup brown sugar
¼ tsp ground cloves
2 Tbsp tamari (Japanese soy sauce)
2 tsp minced garlic
2 Tbsp cornstarch
2 Tbsp cold water
¼ cup cilantro sprigs
Remove skin from drumsticks. Put drumsticks in slow cooker.
Combine coconut milk, 1/2 cup water, brown sugar, cloves, tamari and garlic; pour over chicken. Cover and cook on high 4-6 hours. Transfer chicken to a platter and cover.
Pour pan juices from slow cooker into a small saucepan. Mix cornstarch and cold water and add to pan juices. Boil over medium heat, stirring constantly, until thickened. Garnish chicken with minced cilantro. Pass sauce. Serve with brown or basmati rice. Serves 4.
Tips:
1. To remove the skin from chicken pieces, loosen the skin then grab it with a piece of paper towel and pull away from the chicken. The paper towel improves your grip on the skin.
2. Freeze the remaining coconut milk for another time.
