Manitoba Chicken Producers - Recipes
Light and Crunchy Chicken Parmesan
4 boneless, skinless chicken breasts, filet removed
2 cups freshly made course bread crumbs*
1/2 cup finely grated parmesan cheese
1/4 cup butter, melted
1 tsp each, dried thyme and oregano (or 1 Tbsp ea. fresh, finely minced)
1 Tbsp finely grated lemon zest
cracked black pepper
Preheat oven to 400F (250C). Starting at the thickest side of the chicken breast, slice each piece in half and place the halves in a baking dish lined with parchment paper.

Combine the breadcrumbs, parmesan, butter, thyme, oregano, lemon zest and pepper. Top each chicken breast with breadcrumb mixture. Bake for 10 -15 minutes, or until chicken is cooked through and the crumbs are golden.

Serve with a fresh tomato salad

* To make fresh breadcrumbs, remove the crusts from sliced white or multigrain bread and dice the bread into very small cubes.
